But here is a solution that let’s you off the hook and lets your client feel important: Let loyal guests know that—with one or two days’ notice—the restaurant often can accommodate special orders for items that don’t appear, or no longer appear, on the regular menu. Scaling back the menu can save you money. Customizing with the clients increases the PR value.
